Oven Baked Veggie Omelet

  • 4 large eggs
  • Diced Red Onions
  • Diced Green Bell Peppers
  • Diced Scallions (Spring Onions)
  • 1 Teaspoon of oil
  • 2 Teaspoons of POKS All Purpose Seasoning
  • Cheese (optional)
  • Other vegetables (optional)

 

  1. Mix vegetables together and stir in 1/2 cup of vegetable mixture with eggs
  2. Add oil and seasoning and beat mixture together
  3. Pour into 2 ramekin porcelain bowls or baking pan
  4. Preheat oven to 350F
  5. Bake at for 25 minutes to 30 minutes
