Juliana's Baked Chicken Skillet


  • 6 Chicken Drumsticks

  • 2 Tbsp POKS Spices All Purpose Seasoning

  • Salt

  • 1 Cup Cooked Quinoa

  • 1 Cup Cooked Lentils

  • 1 Cup Steamed Mixed Veggies

  • Hot Chunky Salsa

  • 2 Tbsp Olive Oil


  1. Season the chicken drumsticks with POKS Spices All Purpose Seasoning and salt to taste.

  2. Bake the chicken at 400F for 20 to 30 minutes.

  3. Combine quinoa, lentils, steamed veggies and hot chunky salsa in a cast iron skillet.

  4. De-bone the baked chicken and add the chicken pieces to the skillet

  5. Add the olive oil to the top of the mixture and bake at 400F for 20 minutes.
