Louisiana Style Beans and Rice

Beans, especially the black eye beans, is indigenous to West Africa. In addition to being a good source of protein, it is used to thicken other dishes. In vegan diets, rice and beans combinations have been shown to be complementary foods which provide the needed carbohydrates and protein for proper nutrition. These combinations are not only found in various format in West Africa, but in the Caribbean, South America and Southern USA. The Louisiana beans and rice combination is similar to the aforementioned rice and beans combinations mentioned. In this dish, we subbed out the bell pepper needed for the Cajun/Creole holy trinity with Jalapeño, because we used the POKS Spices Mild Spicy Jalapeño-Based West African Seasoning.
