Naomi's Jambalaya


  • Canned Tomatoes

  • Onions

  • Garlic

  • Red Bell Peppers

  • Green Bell Peppers

  • Cauliflower Rice

  • Olive Oil

  • Shrimp

  • Chicken

  • Sausage

  • Salt

  • Old Bay Spice

  • POKS Spices All Purpose Seasoning


In a pan, sweat onions and garlic in olive oil till soft.

Add in diced bell peppers.

Add in canned tomatoes.

On the side, cook the shrimps seasoned with Old Bay Spice, and chicken and add to the main pot.

Add in the chopped sausage to the main pot.

Allow all the protein (shrimp, chicken and sausage) to marinate for ~20 minutes.

Add the cauliflower rice to the pot and cook covered for another 30 minutes.

Add in POKS Spices and salt to taste, and simmer for another 10 minutes.
