2 cups cooked quinoa
1 cup steamed veggies (broccoli, carrots, peas and corn are a great choice)
3/4 pound large shrimp
3 tbsp POKS Spices (Mama's Recipe)
2 tbsp low sodium soy sauce
6 egg whites
1/2 cup spring onions
2 tbsp olive oil
In a bowl add POKS Spices to the washed shrimp.
Using the olive oil sauté the shrimp in a medium sauce pan until it turns pink.
Stir in the steamed veggies and spring onions, and when the excess water boils off add the beaten egg whites
Stir the mixture on low heat until eggs are cooked all the way through
Add in quinoa, followed by the soy sauce and stir! Enjoy
